Lamb Shoulder Chop Stew

Today I saw that there were some leftover Lamb shoulder chops in the fridge. So I decided to make a stew for my husband’s lunch. He loves when I make some sort of dish with white beans in it. He loved it! Mark this one up as a hit.

1 tbls. of Olive Oil

1 diced Onion

3 cloves of minced Garlic

4 oz. sliced White Mushrooms

1 diced Tomato

1 cup of fresh Spinach

1 15oz. can of White Beans

6 oz. Chicken Broth

2 leftover BBQ Lamb Shoulder Chops

In a sauce pan, add olive oil over medium heat. Saute onions, garlic and mushrooms for about 5 mins. Add the spinach, tomatoes, broth and beans. Stir up the mixture and once it comes to a boil, add the Lamb. Nestling them down in the mixture. Leave on medium low for about an hour and serve.
