Lentil Soup

My Nephew Eric serves this dish at his annual Oktoberfest and it is really good.

2 c. of Lentils

1 tbls, Olive Oil

1 Onion (finely chopped)

1 Leek (finely chopped)

1 Carrot (finely diced)

2 Celery Ribs (chopped)

4 oz. Lean Bacon (cut into pieces)

1 Smoked Sausage

2 Bay  Leaves

6 1⁄4 c. Water

2 tbls. Fresh Parsley (chopped, plus extra to garnish)

8 oz. Frankfurters (sliced)

Salt & freshly Ground Black Pepper

Rinse lentils thoroughly under cold running water. Heat oil in a large pot & gently fry onion for 5 mins. or until soft. Add the leeks, carrots, celery, bay leaves, lentils & water to the pan. Slowly bring to a boil, then add the bacon and smoked sausage. Simmer on low until ready to serve.
