Sauerkraut

This recipe is from my Sister-n-Law Claudi who is from Germany. This is an authentic German Dish!

1 lb. Smoked Sausage

1 tbls. Butter

1 Onion cut in half

2 c. Water or Vegetable Broth

1 Bay Leaf

2 or 3 cloves

5 Juniper berries

2 lb. Sauerkraut

Salt and Pepper

1/2 c. White Wine to reduce and simmer

Rinse the Sauerkraut and add all of the ingredients together in a pot and let it simmer for at least 3 or 4 hours. Check the fluid. If there is not enough fluid add some water. It’s done when the Sauerkraut starts to look golden. Easiest way to cook it, put it all in a slow cooker.
